Veg biriyani recipe

2 cups of basmati rice
One cup mixed vegetables (carrot, beans, peas, cauliflower)
2 onions
1 large tomato
1-1/2 cups of thick coconut milk
3 cloves
3 cardomom
2 cinnamon stick
1 bayleaf
Oil and Ghee as per requirement
Salt

To grind (Do not add any water)
A bunch of coriander leaves
Bunch of mint leaves
2 small onions
1-1/2 tablespoon of ginger garlic paste
Coriander seeds - 1 teaspoon
Poppy seeds - 1/2 teaspoon
Cardomom - 1
Cloves - 1
Cinnamon stick - 1
Green chillies - 4 or 5


1. Wash and soak the rice.
2. Grind all the above into a paste.
3. Heat a cooker, add oil/ghee, add cardomom, bayleaf, cinnamon, and cloves.
4. Then add onion and saute.
5. Once onion turns a little translucent, add tomato and saute for 2 to 3 mins.
6. Add the mixed vegetables and saute for 1 or 2 mins.
7. Add the ground masala.
8. Saute till the light green masala turns a little darker and a nice aroma comes out of it. See to it there is no extra water in the masala.
9. Add coconut milk and water (for 2 cups of soaked rice, 3-1/2 cups of water+milk)
10. Add salt.
11. You can add little more ghee at this point.
12. After the water starts boiling, add rice and close the lid.
13. Leave it for 2 whitsles and switch it off.

Your vegetable biryani is ready to be served with raita of your choice.
